Please, please, please don't ever allow flying mounts. Flying wrecks the awe and sense of scale inherent to the majestic feeling of Guild Wars 2. Flying over enemies also destroys the threat of danger from npc mobs and other players. It quite frankly killed World PvP in WoW and I'm sure it'd do the same in GW2.
