You can actually see each of those components except exploring on the main map, and use the table on Master of the North to count what you're missing, how much you have explored and such.

• The quests that count are the ones that give the standards out on the map, so just count NM and HM standards.
• Dungeons are the same, so count the chests, again both NM and HM.
• And Vanquishing is of course shown just like everywhere else, the gold helmet.
