You will want to have an interrupt skill equipped, as Knorr Oaken will transform into a bear about 2 seconds after the duel starts. Use whatever interrupt skill you have first, to prevent this transformation, then follow up with ranged attacks. Also he uses healing signet and it is helpful to interrupt this as well.
